No-Bake Spinach Artichoke Dip

The holidays are officially here: cool nights, cozy blankets, parties, cookies—and lots of dips. This no-bake spinach artichoke dip is my dairy-free answer to the familiar favorite. It’s simple, creamy, and full of bright, savory flavors that stand up well alongside other holiday dishes.

This Thanksgiving turned out to be one of my best. Family came together, the kitchen hummed, and for the first time in months I felt inspired to cook. I tested several new recipes that day, many of them vegan to accommodate family members avoiding dairy, and this spinach artichoke dip was one of the standouts.

We served it as part of a casual spread—deviled eggs, crackers and an array of cheeses, pickled jalapeños and olives, a cashew cheese spread, and this dip hollowed into a pumpernickel bread bowl. It made a perfect lunch starter before the big dinner.

I wanted a dairy-free dip that wouldn’t taste watered down or flat. To keep the profile interesting I used a few flavor boosters: a touch of Dijon for tang, diced pickled jalapeño for a bright, rounded flavor (not heat), chopped pimentos for color, and a little dried minced onion and garlic powder to deepen the savory notes. A small amount of vegan cream cheese adds a silky texture that mimics the richness of dairy without overwhelming the other ingredients.

My approach avoids relying on shredded vegan cheeses, which often don’t deliver the texture or melt that people expect. Instead, vegan mayonnaise and a bit of vegan cream cheese give the dip a smooth, luscious mouthfeel while letting the spinach and artichokes remain the stars.

In short: you get all the familiar, comforting flavors of spinach artichoke dip—spinach, marinated artichokes, a hint of Dijon, and subtle onion and garlic—without any dairy. It’s an easy, reliable recipe that chills and holds well, making it ideal for parties and holiday entertaining.
