These Cookies & Cream Cake Batter Blondies are irresistible: soft, chewy, buttery bars that capture the taste of Funfetti cake batter and are studded with Oreo pieces for a cookies-and-cream finish.

I hope everyone had a lovely Memorial Day weekend. Mine was low-key—some naps, a little cleaning, and trying the Popeye’s chicken sandwich. It was good, but the real excitement for me was making these blondies.

I first shared a cake batter blondie recipe months ago and the feedback was amazing. That version inspired this cookies-and-cream twist, and I’m so glad I combined white chocolate cake-batter flavor with Oreos—what a winning pairing!

These blondies are rich and fudgy thanks to melted white chocolate, which creates that unmistakable cake-batter flavor. The texture is similar to a white chocolate brownie: gooey and dense, but soft and chewy in every bite. Rainbow sprinkles add a festive look, while chopped Oreos bring in crunchy, creamy pockets throughout the bars.

Tips for the best Cake Batter Blondies

  1. Use good-quality white chocolate. Since white chocolate defines the cake-batter flavor, brands like Ghirardelli or Guittard yield the best results.
  2. Choose white chocolate baking bars rather than chips. Baking bars usually melt more smoothly and are less prone to scorching than chips, which can be temperamental—especially white chocolate chips.
  3. Pick the right sprinkles. Tube-shaped jimmies hold their shape during baking and won’t bleed color like tiny nonpareils, which can dissolve and create a muddy appearance.

Ready to bake? You’ll melt butter with white chocolate, stir in sugars, eggs, and vanilla, then fold in flour, sprinkles, and roughly chopped Oreos. Spread the batter in a prepared pan, bake until golden and set, cool completely, and cut into bars. They’re fun, festive, and utterly delicious.

Ingredients

  • ½ cup (1 stick) unsalted butter cubed
  • 8 ounces (or two 4-ounce bars) white chocolate bars roughly chopped
  • ½ cup granulated white sugar
  • ¼ cup light brown sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • ¼ teaspoon salt
  • cups all-purpose flour
  • 1/3 cup rainbow jimmie sprinkles
  • 1/2 cup Oreo cookies roughly chopped in bite-size pieces

Instructions

  • Preheat the oven to 350°F. Line an 8×8 light metal baking pan with foil, letting the foil hang over the edges, and spray the foil with cooking spray. Set aside.
  • In a large microwave-safe bowl, combine the cubed butter and chopped white chocolate bars. Microwave on high in 20-second bursts, stirring between each interval, until the mixture is smooth and fully melted. Let cool about 5 minutes. Melting white chocolate slowly prevents scorching.
  • Stir in granulated and brown sugars, then add the eggs and vanilla, mixing until combined. Fold in the salt and flour until just incorporated, then gently fold in the rainbow jimmie sprinkles and chopped Oreo pieces.
  • Spread the batter evenly in the prepared pan and smooth the top. Bake 25–35 minutes, or until the top is light golden and a toothpick inserted near the center comes out clean. Cool completely before cutting into bars.

Notes

A light metal pan gives the most consistent results. A glass pan may require additional baking time in the center, while dark metal pans can brown faster—monitor accordingly.
