Base:
  • 135 g cracker crumbs 1 ½ cups, I used Mary’s Cupboard
  • 117 g pure maple syrup ⅓ cup
Filling:
  • 340 g silken tofu 1 ¼ cups
  • 227 g Tofutti 1 cup
  • 81 g almond milk ⅓ cup
  • 66 g pure maple syrup 3 tbsp
  • 151 g washed and hulled strawberries 1 cup
  • 50 g raspberries ½ cup
  • 50 g blueberries ½ cup
  • Powdered sugar to taste
Topping:
  • 1 can full-fat coconut milk or cream
  • 22 g pure maple syrup 1 tbsp
  • 3 g pure vanilla extract ½ tsp
  • Fresh blueberries

Method

  1. Prepare the base: Pulse crackers in a food processor until finely ground. Sift out any larger pieces, then pulse again if needed. Add the maple syrup and blend until the crumbs are evenly moistened. Press the mixture firmly into the bottom of a 6 inch springform pan using the bottom of a cup to compact it. Set the pan aside while you make the filling.
To make the filling:
  1. Blend the berries and almond milk until very smooth, then strain the mixture through a fine sieve to remove seeds and any large pieces. Rinse the blender to remove residual seeds.
  2. Return the strained berry-milk to the blender. Add silken tofu, Tofutti (or vegan cream cheese), maple syrup and powdered sugar to taste. Blend on high until the filling is thick, glossy and completely smooth. Taste and adjust sweetness if needed. Pour the filling over the prepared cracker crust and smooth the top with a spatula. Refrigerate for at least five hours, or ideally overnight, until the cheesecake is set.
To make the topping:
  1. Chill a can of full-fat coconut milk in the fridge overnight so the solids separate from the liquid. When ready, do not shake the can. Open it and scoop the thickened solids into a chilled mixing bowl.
  2. Whip the coconut solids on high for a few seconds to aerate, then add maple syrup and vanilla. Continue whipping for about two minutes until light and creamy. Transfer the whipped coconut cream to a piping bag fitted with a #6 closed star tip and pipe decorative swirls around the cake. Garnish with fresh blueberries.
  3. Use any remaining whipped coconut cream to serve alongside fresh fruit or dollop on individual slices.

Sweet tip: For the best whipped topping, chill the mixing bowl and whisk in the freezer for five minutes before whipping. Preparing the cheesecake the night before improves texture and flavor. A quick five-minute freeze before slicing helps achieve clean, smooth cuts.
