Keto Beef Taco Nachos
Ingredients
- ½ lb ground beef
- 2 tsp taco seasoning (keto-friendly)
- 2 tbsp tomato sauce
- 2 tbsp water
- 1 bag (4 oz) pork rinds
- 1½ cups shredded cheddar cheese
- ½ avocado, chopped
- 4 tbsp sliced olives (optional)
- 4 tbsp full-fat sour cream (optional)
- 1 oz pickled sliced jalapeños (optional)
Directions
- Preheat the oven to 350°F (177°C). Line or grease a baking sheet.
- In a large skillet over medium heat, add the ground beef and break it up with a spoon. Cook until browned and no longer pink.
- Drain excess grease, return the skillet to low heat, then add the tomato sauce, water, and taco seasoning. Stir to coat the meat.
- Cover and simmer for 5 minutes to let the flavors meld.
- Arrange pork rinds on the prepared baking sheet. Top with the seasoned beef, olives (if using), and shredded cheese.
- Bake 5–8 minutes, until the cheese is melted and bubbly.
- Remove from the oven and finish with chopped avocado, sour cream, jalapeños, and hot sauce to taste. Serve immediately.
