I remind myself of that lesson with every new relationship. While it’s true we should accept loved ones as they are, small changes can be encouraged without rewriting someone’s whole personality.

Punctuality, card writing, and emotional expression were things I hoped to shift once the honeymoon period with Charlie faded. I’ve been surprised—sometimes moved to tears—by the progress he’s made on those counts, especially when his emotional openness and thoughtful gestures come together. But the most obvious transformation has been in his eating habits.

It might sound obvious that someone would eat better with a partner preparing home meals, but Charlie’s habits didn’t change by magic. For a while I worried he’d drag my habits toward excess rather than the other way around.

The best part of my honeymoon periods is rarely private; it’s at the table. Charlie’s love of food and wine was part of his charm—he tended to overbuy both. Early on we indulged more: weekday drinks and weekend bacon binges. We were happily indulgent until I realized that for Charlie, that was the baseline way of living.

A month of cutting caffeine, alcohol, and sugar during The Wellness Project helped me reclaim healthier routines after our early excesses. Researching better eating habits meant sifting through extremes and alarmist claims, but I couldn’t help worrying about Charlie’s long-term health if he didn’t balance his diet.

My friend Serena Wolf has similar concerns in her cooking and writing. She created The Dude Diet as a way to lighten comfort food for people who otherwise might ignore healthier choices. Her column has grown into a book that uses humor to make sensible changes feel achievable and fun.

This faux rotisserie chicken is roasted low and slow in the oven and topped with an addictive mixture of herbs and spices. It’s gluten-free and perfect for a make ahead meal.

I used whole cumin seeds because that’s what I had on hand, and maple sugar for sweetness. The spice mix is also great on turkey, and leftovers improve after a day.

Ingredients

  • One 3 1/2 to 4 pound whole chicken
  • 5 whole garlic cloves, smashed
  • 1/2 lemon, quartered
  • 2 1/2 teaspoons smoked paprika
  • 2 teaspoon kosher salt
  • 2 teaspoons light brown sugar
  • 1 1/2 teaspoons chili powder
  • 1 teaspoon freshly ground black pepper
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon cumin
  • 3 tablespoons olive oil
  • Kitchen twine

Instructions

  • Preheat the oven to 300 degrees F.
  • Remove the giblets from the cavity, rinse the chicken thoroughly, and pat dry with paper towels. Stuff the cavity with smashed garlic cloves and lemon quarters.
  • In a small bowl, combine smoked paprika, kosher salt, light brown sugar, chili powder, black pepper, garlic powder, and cumin. Gently loosen the skin over the breast and rub 1 tablespoon olive oil and 1 teaspoon of the spice mix under the skin. Rub the remaining 2 tablespoons olive oil over the skin and season the whole bird with the rest of the spice mixture. Tie the legs together with kitchen twine and place the chicken breast-side up in an ovenproof skillet or roasting pan.
  • Roast for 2 hours 45 minutes to 3 hours, basting once or twice by spooning pan juices over the bird, until the meat is very tender and the skin is dark brown. Some blackening on the skin is normal and adds flavor.
  • Let the chicken rest 10 minutes before carving and serving.
