I’m used to feeding a houseful, but this week everyone else is out of town and it’s just my teenage daughter and me. With two people at home, I’ve been making simple, light meals like this 10-minute wonton soup. It’s a quick “Costco hack” you can assemble faster than a trip through the drive-through. I enjoy cooking from scratch, but sometimes you need an ultra-easy, satisfying option.
10-Minute Wonton Soup
This recipe relies on two pantry staples I buy at Costco for their flavor and value. While homemade wontons are wonderful, frozen Bibigo Chicken & Cilantro mini wontons are an excellent shortcut—tasty, filling and low in calories (about 50 calories for four wontons). The other ingredient I use is Better Than Bouillon chicken base, a concentrated stock that makes a flavorful broth without the fuss. It’s rich and versatile; if you find it a little salty, use a touch less per cup of water than the package recommends.
To make the broth: combine water, chicken soup base, freshly grated ginger, sesame oil and Sriracha in a large soup pot and bring to a boil. Fresh ginger adds brightness; to avoid waste, peel a whole knob and freeze it. Frozen ginger grates easily, and a Microplane or zester will give you fine, aromatic pieces.

After the broth has simmered briefly, add frozen wontons and sliced green onions, then return the pot to a boil. Dehydrated green onions work if you prefer pantry staples. For extra color and nutrition, toss in baby bok choy with the wontons, or add baby spinach right at the end of cooking so it wilts gently. Cook 3–5 minutes or until the wontons are heated through and the greens are tender.

Ladle the soup into bowls and let everyone finish their own with soy sauce, chili oil, extra Sriracha or other favorite condiments. Pair with fresh fruit or a salad and you’ve got a light, low-calorie lunch or dinner in about 10 minutes—no drive-through required.

- 2 green onions cleaned and thinly sliced, or substitute dehydrated green onions
Instructions

Add frozen wontons and sliced green onions. Return to a boil and cook 3–5 minutes, or until the wontons are heated through.

If using baby bok choy, add it with the frozen wontons and green onions. If using baby spinach, stir it in at the end so it wilts quickly.
