This homemade egg noodles recipe makes the best egg noodles! It’s a simple, beloved recipe passed down from my Great Grandma on my dad’s side. She grew a love of gardening in our family and cooked with the same wholesome, straightforward approach. Homemade Egg Noodles Recipe

Ingredients
2 eggs
1/2 tsp salt
1/4 cup milk
2–3 cups all-purpose flour
Instructions
- Beat the eggs lightly in a bowl.
- Add the salt and milk; mix to combine.
- Stir in 2 cups of flour, then mix thoroughly with your hands.
- Add additional flour as needed until the dough is stiff but manageable.
- Turn the dough onto a well-floured surface and knead until smooth and elastic.
- Cover the dough and let it rest for 10 minutes.
- Roll the dough very thin with a rolling pin.
- Cut the dough into strips about 1/8 inch wide to your desired length.
- Let the noodles dry for 2–3 hours, turning once so they dry evenly. (See notes if you need to dry longer.)
- When ready to cook, drop the noodles into boiling water or broth and simmer 12 to 15 minutes, until tender.
- If cooking in water, drain the noodles thoroughly before serving.
Notes
*If you make the noodles earlier in the day, they can be left to dry longer so they’re ready for dinner.
