How To Make Bourbon Balls

  1. Heat the cream – Pour the heavy cream into a small to medium saucepan and heat until it just begins to simmer.
  2. Combine – Remove from heat and add the chopped chocolate, bourbon (if using), a pinch of sea salt, and vanilla. Whisk until the chocolate is fully melted and the mixture is smooth. If needed, return to very low heat briefly to finish melting.
  3. Chill – Transfer the ganache to a bowl, cover, and refrigerate for 3–4 hours, until firm enough to scoop.
  4. Scoop and roll – Use a small cookie scoop (#40) or a spoon to portion the mixture. Roll each portion into a ball, then coat in the crushed pecans.
  5. Set – Refrigerate the coated truffles for at least 2 hours so they hold their shape.
  6. Serve – Arrange on a platter and enjoy.

Instructions
