SPAM Sinigang Recipe: Tangy Filipino Stew (Episode 6)

I’m so happy this one came up. I love sinigang, and while you can find a version without SPAM on my site, I wanted to share this SPAM variation here as well.

SPAM Singang

For the sinigang mix I used a packet from my local Asian supermarket. The packet suggests 2 liters (about 8 cups) of water, but I prefer a tangier broth so I reduced it to 1.5 liters (6 cups). Adjust the water to your taste.

Ingredients

  • 1 can SPAM, cubed
  • 1 daikon, sliced into rounds
  • 1 large tomato, roughly chopped
  • 2 yellow chili peppers (whole)
  • a few heads of baby bok choy, roots removed
  • 1 packet sinigang mix
  • 1 onion, quartered
  • 6 cups water (adjust to taste)

Directions

1. Prepare the ingredients: cube the SPAM, roughly chop the tomato and onion, slice the daikon into rounds, and trim the roots from the bok choy.

2. In a large pot, bring the water to a boil. Add the tomato and onion and let them simmer for about 5 minutes to release their flavor into the broth.

3. Add the sinigang seasoning, daikon, cubed SPAM, and the whole yellow chili peppers. Simmer until the daikon is tender, about 15 minutes or to your liking.

4. Add the baby bok choy in the final minutes and cook until the greens are wilted but still bright.

5. Serve hot with steamed rice and enjoy.

  4. Add the bok choy and cook until just wilted.
  5. Serve hot with rice and enjoy.
