Equipment:

  • Blender
  • Popsicle molds
  • Popsicle sticks

Ingredients:

  • 1 cup fresh strawberries, hulled and halved
  • 1 cup fresh mango, peeled and diced
  • 1/2 cup orange juice or water
  • 2 tbsp honey, or to taste (optional)

Instructions:

  1. Prepare the fruit:
    • Place strawberries, mango, orange juice (or water), and honey (if using) in a blender. Blend until smooth, scraping down the sides as needed to get an even texture.
  2. Fill the molds:
    • Pour the blended mixture into popsicle molds, leaving a small gap at the top to allow for expansion. If you like, add small chunks of strawberry or mango to the molds before pouring for extra texture.
  3. Insert sticks and freeze:
    • Insert popsicle sticks and transfer the molds to the freezer. Freeze for at least 4 hours, or until completely solid.
  4. Unmold and serve:
    • To release the popsicles, run the outside of the molds under warm water for a few seconds, then gently pull the popsicles free. Serve immediately.

Tips and variations:

  • Use any clear juice instead of orange juice to vary the flavor—apple, white grape, or pineapple work well.
  • Adjust sweetness by adding more or less honey, or replace honey with maple syrup or agave for a vegan option.
  • For layered popsicles, pour a thin layer of mango puree, freeze briefly, then add a strawberry layer.
  • If fresh fruit isn’t available, frozen strawberries and mango can be used—thaw slightly before blending and reduce added liquid if needed.
