One of our family traditions is that on a birthday the celebrant gets to pick a special family-only meal for the actual day. This month my oldest turned eight and chose breakfast for dinner, so I made his favorite: fluffy buttermilk waffles. We served them with scrambled eggs, fruit, sausage, and maple syrup for a cozy, celebratory meal.

Setting the scene

To make the evening feel special we decorated the kitchen and table with balloons, a “Happy Birthday” banner, and an eight-candle. For presents he received two books—The Wild Robot and a choose-your-own-adventure titled The Ghost on the Mountain—plus a Nintendo game and some Pokémon cards. It was just enough to make him feel loved and celebrated.

With four boys at home I usually make a large batch of waffle batter. This recipe is easy to halve or store: prepare the batter in a mixing bowl with a lid and refrigerate for up to three days. Timing matters when you make a breakfast-style dinner—start with the batter, then put sausages in the oven, cook waffles (about 2 minutes each with a good waffle iron), prepare scrambled eggs (I use two eggs per person), and keep maple syrup warm on very low heat.

Makes about 16 waffles

  • Dry ingredients:
    • 4 cups all-purpose flour
    • 4 tablespoons white sugar

Tools

The right tools make a big difference. I switched to a vertical waffle iron a few years ago and haven’t looked back: it yields waffles that are crispy on the outside, tender on the inside, and consistently golden because the batter spreads evenly. A good waffle iron with a measuring cup and ready/done indicators speeds the process and improves results.

Other useful tools for this recipe include measuring cups and spoons, at least two mixing bowls (lidded bowls are helpful for storing batter), a whisk, and a spatula. These simple items keep the process smooth and help you serve everything hot and fresh.
