  • 2 boxes pumpkin cake mix
  • 1 cup vegetable oil
  • 4 eggs
  • 1 can cream cheese frosting

Preheat the oven to 350°F (175°C). In a large bowl combine the cake mix, vegetable oil, and eggs until a uniform dough forms. Drop heaping spoonfuls onto baking sheets about 1 inch apart. Bake for 12 minutes. Let the cookies rest on the pan for 2 minutes, then transfer to a wire rack to cool completely.

When cookies are cooled, place the frosting in a microwave-safe bowl and heat for 30 seconds. Stir and continue heating in short increments until the frosting is very runny. Dip the top of each cooled cookie into the melted frosting, swirl, then flip the cookie over and let it set on a wired rack until the glaze firms up. Enjoy!
