Shaping Your Meat

Shaping the meat into thin, even sheets is key. The patties will shrink as they cook, so flatten the meat to roughly the size of six dinner rolls attached together. I usually divide the mixture into two portions so I can create two sheets, then place them on the oven pan to bake.

Once cooked, the sheets fit neatly on the bottom halves of the rolls. If you’re bringing these to a gathering, assemble and wrap them in foil; cut them into individual sliders when you arrive to keep them warm and fresh.

These sliders are intentionally very onion-forward. The recipe uses fresh minced onion, dried minced onion, Lipton onion soup mix and a bit of onion powder to build that signature, savory onion profile.

If you’re not an onion fan, this isn’t the slider for you—this version celebrates the onion in every bite.

Peanut Butter In The Mix

Peanut butter might seem unusual here, but when whisked with milk it gives the beef a tender, slightly creamy texture that echoes the mouthfeel of the classic White Castle patty. The flavor is subtle but important for authenticity.

If you need a nut-free option, try a sunflower butter or another neutral, creamy substitute with similar consistency. Miso paste can also work as an alternative to add umami, but reduce added salt if you use it since miso is quite salty.

This peanut-butter technique originates from an older White Castle cookbook and helps replicate the distinctive slider texture at home. Feel free to experiment with substitutes to suit allergies or taste preferences.

Homemade White Castle Sliders

These sliders are a straightforward copycat of the fast-food favorite, combining beef, multiple forms of onion, onion soup mix, and a peanut butter–milk blend to recreate the classic texture and flavor. They’re ideal for feeding a crowd or serving as a nostalgic snack.

Ingredients

  • 1.5 lbs ground beef (80/20 recommended)
  • 1 packet Lipton onion soup mix
  • 3 tablespoons dried minced onion
  • 1 heaping tablespoon creamy peanut butter (or substitute for nut allergies)
  • 1/4 cup milk
  • 1 medium sweet onion, very finely minced
  • 1 package (12) dinner rolls
  • Hamburger dill pickle slices
  • 1/4 teaspoon black pepper, or to taste
  • 1/4 teaspoon celery salt, or to taste
  • 1/2 teaspoon onion powder
  • 6 to 8 American cheese slices (Kraft or Velveeta)

Instructions

  1. Whisk peanut butter and milk together in a small bowl until smooth.
  2. In a larger bowl combine ground beef, dried minced onion, Lipton soup mix, celery salt, black pepper, a small splash of pickle juice (about 1/2 tablespoon), and the peanut butter–milk mixture.
  3. Gently mix until combined; avoid overmixing the meat.
  4. Preheat oven to 375°F. Line a rimmed baking sheet with foil and spread half of the fresh minced onion over the bottom.
  5. Divide the meat into two portions. Place each portion on top of the onions and press into even, thin rectangles roughly the size of six connected dinner rolls. Make the sheets slightly larger than the buns since the meat will shrink while baking.
  6. Top each flattened meat sheet with the remaining finely minced onion.
  7. Cover with foil and bake for 15 minutes. Remove foil and bake an additional 10 minutes.
  8. Reduce oven to 325°F. Add cheese slices and pickle rounds on top of the meat, then place only the top halves of the rolls over the cheese. Bake about 5 minutes, until the cheese melts.
  9. Remove from oven. Place the cooked meat and bun tops onto the roll bottoms, then cut into individual sliders.
  10. Serve warm. These are excellent with spicy brown mustard.
