Crispy Fried Provolone Salad with Arugula and Lemon Dressing

Crispy Provolone Salad only takes a couple of minutes to make and is perfect for when you want a crunchy side to accompany especially rich dinners or lunches.

Crispy Provolone Salad

This quick, flavorful salad uses just a few main ingredients, but it’s the bright, garlicky lemon dressing that makes this Crispy Provolone Salad stand out. With the salty, creamy character of provolone paired with crisp lettuce and juicy cherry tomatoes, it’s a perfect light counterpoint to heavy, meaty dishes.

I make this salad often when we’re serving indulgent mains—oxtail, roasts, or rich pastas—because it refreshes the palate and adds a pleasant crunch. It also pairs nicely with fish for a lighter meal.

The salad holds up well in the refrigerator for up to two days, though it’s freshest the day it’s made.

Ingredients

Salad:

  • 250 grams Crispy Lettuce torn into smaller pieces (8 oz)
  • 1 cup Provolone Cheese grated
  • 1 cup Cherry Tomatoes halved (Italian preferred)

Dressing:

  • ¼ cup Vegetable Oil
  • ¼ cup Extra-Virgin Olive Oil
  • ¼ cup Lemon Juice freshly squeezed
  • 2 t Lemon Peel finely grated
  • 2 t Fresh Garlic crushed
  • ½ t Black Pepper
  • ½ t Salt

Instructions

  1. Toss the lettuce, grated provolone and halved cherry tomatoes together in a large salad bowl.
  2. Whisk or shake all dressing ingredients together until well combined — a jar with a lid works great for this.
  3. Drizzle the dressing over the salad, chill briefly if desired, then serve immediately.

Voila! A quick, tasty salad that’s easy to prepare and pairs beautifully with rich mains.
