- 2 lbs. boneless sirloin steak, sliced into ½–inch strips

- 2 tablespoon cornstarch
- 2 teaspoon salt
- 2 teaspoon sugar
- 2 tablespoon soy sauce
- dash of pepper

Marinate Beef

Trim excess fat from the sirloin and cut into ½-inch strips. Place the beef in a shallow dish. In a bowl, whisk together the marinade ingredients (vegetable oil, cornstarch, salt, sugar, soy sauce, and a dash of pepper) until combined. Pour the marinade over the beef, toss to coat, cover, and refrigerate overnight to tenderize and infuse flavor.

Slice the scallions into small pieces and set aside.
