It’s the middle of summer, and cold frozen snacks are welcome every day. On a hot afternoon a refreshing bite is often just what you need.
We make all kinds of popsicles and frozen treats, but chocolate-covered banana bites are a favorite when you want a small, satisfying dessert instead of a full popsicle. They’re quick to make, lighter than many store-bought options, and easy to customize.
I prefer using ripe bananas because their sweetness complements the chocolate well, but use whatever ripeness you enjoy most.

Chocolate-Covered Banana Bites
Notes and tips for great results:
- For a lighter coating, I mix melted coconut oil, cocoa powder and a touch of liquid stevia. If you prefer, use melted chocolate chips and a little butter (about 1 cup chocolate chips to 2 tablespoons butter). Heat gently to avoid scorching and keep moisture away from the chocolate so it doesn’t seize.
- Handling frozen banana slices can be slippery. I found lifting slices out with a fork (supporting underneath rather than piercing the side) works best to dip them and retain coverage.
- Keep the bites frozen until serving. Bananas can brown if allowed to partially thaw, so store only what you’ll eat within a week or two for the best texture and flavor.

Ingredients
- 1 banana
- 1/4 cup melted coconut oil
- 2 Tablespoons cocoa powder
- liquid stevia, to taste (about 1/4 teaspoon)
Instructions
- Slice the banana into 1/4–1/3 inch thick rounds and freeze them until solid.
- Combine melted coconut oil, cocoa powder and a squeeze of liquid stevia. Stir until smooth.
- Working quickly so the banana slices don’t thaw, dip each frozen slice into the chocolate mixture one at a time.
- Place dipped slices on parchment paper. Stir the chocolate between dips and repeat until all slices are coated.

- The coating can be thin on the first pass; after the first layer hardens you can re-dip slices for a thicker coating if desired.
- Store the finished bites in the freezer and keep them frozen until ready to serve.
