I’m getting ready for the Game of Thrones premiere — can you tell? These vegan and paleo-friendly chocolate layer bars are made with just a few wholesome ingredients and contain no refined sugar. The natural green color comes from ripe avocado, creating a creamy, indulgent filling that contrasts beautifully with a chocolate coating.

Magical Chocolate Dragon Bars

By Katie Higgins
These avocado chocolate dragon bars are a truly magical chocolate dessert.
Prep Time: 5 minutes
Total Time: 5 minutes
Yield: 9 – 12 bars

Ingredients

  • 1/2 cup mashed ripe avocado
  • 1/2 cup coconut butter
  • 1/4 cup pure maple syrup, or honey or agave
  • pinch uncut stevia OR 2 additional tbsp each pure maple syrup and coconut butter
  • 1/2 tsp pure vanilla extract
  • 1/16 tsp salt
  • 3 oz chocolate chips (see note below for substitution)

Instructions

  • *If you prefer, omit the chocolate chips and combine equal parts maple syrup, cocoa powder, and melted coconut oil to make a simple chocolate sauce instead.

Recipe: Line an 8-inch pan with parchment or wax paper. In a food processor or high-speed blender, combine the mashed avocado, coconut butter, maple syrup (or preferred sweetener), optional stevia, vanilla, and salt. Blend until completely smooth and creamy — no lumps. Spread the avocado mixture evenly into the prepared pan.

Carefully melt the chocolate chips in short bursts (or using a double boiler) so they don’t burn. Pour or spread the melted chocolate evenly over the avocado layer. Place the pan in the freezer. After about 10 minutes, you can lift the set dessert out and cut it into bars before the chocolate hardens completely for cleaner slices. Store bars in the freezer and let them soften slightly before serving.

Notes

If you have leftover avocado, try making an avocado smoothie or another creamy treat. These bars freeze well, so keep extras on hand for quick dessert portions.
