Instructions

Combine the pears, water, orange juice and orange zest in a large pot. Simmer over medium heat, stirring occasionally, until the pears are very soft, about 20 minutes.

Transfer the cooked pears to a food processor and pulse until smooth and uniform in texture; avoid overprocessing into a liquid.

Measure the purée, then return it to a large heavy-bottomed saucepan. For each cup of purée, stir in 1/2 cup sugar. Add the vanilla, cinnamon, cardamom and orange zest. Cook over medium heat, stirring frequently, until the mixture reduces and becomes thick enough to hold its shape on a spoon.

Ladle the hot pear butter into sterilized jars, leaving 1/4-inch headspace. Seal the jars and process in a boiling-water canner for 10 minutes. Remove jars and let cool completely before storing.
